what kinds of compilers can be used on this antiquated Macintosh SE and where can i find UNIX

Apple MPW (old versions)

Codewarrior? (on an SE?!?)

A/UX Apple's old version of Unix probably requires a heftier computer.

The MPW Shell is a shell of sorts, you could conceivably compile some of the *nix utilities in this shell. bash (or some other *nix shell) running in the MPW Shell running on an Mac SE?

I am used to using IBM compat

I am used to using IBM compatibles. How would I connect that mac se to this e-machine I am using and how would I connect them to a coco3? if possible.

SE to PC - null modem cable serial port to serial port and serial file transfer programs at each end.
If the coco has RS232 serial, probably the same thing
