So my boss found an Apple 2 + in his attic and its missing a power cord and a monitor. I need to be able to test it and see if it works. Would a standard PC power cord work with the power supply? And would a male to male component video cable off Amazon work to hook up to a TV?

Standard PC Power cord, and just a single RCA / composite video cord. A Component video set would have far more wires than you need.
Best of luck :)
I assume it will work on a composite hookup without any audio cables connected?
The speaker is built in, external speakers or audio connections were modifications. The 2 audio jacks on the back are for saving to and loading from Cassette. So just the one RCA cord to the TVs composite input.
Check you attics! Seems like this happens a lot these days: https://www.ebay.com/itm/275474460536
