I found "Programming the Apple IIgs in C and Assembly Language.pdf" but don't know if it explains how to use Orca C.
I believe that ORCA/C is still a commercial piece of software (although there is a repository for the latest version on GitHub) you may have to buy the manual.
If you want to start Apple II assembly language programming why not try Merlin 16 assembler instead? You can download it and the manual here:
