I hate being the voice of reason, but here goes nothing...
Cube guts are probably going to be pretty expensive, for the same price as Cube guts you could probably find a MicroITX board, processor and RAM and a hard drive and run Windows iTunes file sharing on it. I know it's not a Mac, but it does the same thing, probably for far cheaper.
It seems that the Cube parts you'd need are probably as expensive as complete Cubes in poor cosmetic condition.
