You can find the directions of how to make iDVD save disk images which can then be burned with Toast or (depending on the drive) Disk Utility in many places, like:

You can also make Final Cut work on G3s by following the directions here:

Note that I have Final Cut Express working on my original iMac (non AGP), but I did the installation and update manually, which is mentioned in that thread. You probably don't need to worry about the AGP / PCI issue.
