Does anyone know how the ATX PSU powers the fan in the B&W? any one have any links to what I need to do?
Also, being that the ATX PSU has a switch... are there any special instructions for shutting down?

All you need to do is clip the -5V wire and you'll be good to go. Generally it is the white wire.
The switch on the the PSU is just the hard power switch. Leave it in the on position and the soft power will work like it should.
look... the fan in the G3 is powered by a cable from the PSU, not the motherboard, like in previous PowerMacs....
The question I am asking is HOW DOES THE ATX power the fan in the B&W?? (not: how does it power the motherboard? which is what you answered)
Since I've heard of others replacing their fans with different ones quite easily, I'm assuming it is powered via a standard 4-pin molex connection.
The fan I have has a special connector... it has 2 wires, and 2 pins (a male connector).
What appears to be a power connector for the fan on the ATX PSU has 4 wires, and it is a female connector... looks like it is probably standard
The connectors don't match... anyone think there is an adapter... or am I going to have to start cutting wires?
Oops sorry missed the fan part.
On mine I broke off the shroud around the pins and plugged it in the floppy power connector( It is the small 4pin flat looking connector). The fan is just 12v so connect to the side with yellow wire.
