You can use Closeview (OS 9 or before) or Universal Access (OS X) to reverse all the screen colors,. The reversal applies to everything, but it is easily toggled on and off. Textedit that comes with Panther (and maybe earlier OS X versions) lets you control the text color and background color so you could change to black paper and white text.
