I hate to keep asking the basic questions, but where on this earth can I find a boot disk that simply drops me into applesoft? Is it really this hard or am I missing something obvious?
I'm using the emulators.

Which emulators?
If your emulator emulates a ][+ or later, then you don't need a disk. You can press the emulator's equivalent of Ctrl-Reset to abort the boot process and go into Applesoft. But this will not allow you to save your programs to disk. For that you can download a master disk from ftp.apple.asimov.net (DOS 3.3 or ProDOS).

I could not get the ftp.apple.asimov.net link to work, but I think I understand the point. I'll try to find one.

The link has http:// at the start. It should have ftp://:
ftp://ftp.apple.asimov.net
The best way to get into an FTP is to use FTP client software such as Core FTP.
This way if something goes wrong, you'll get an error message that you might be able to fix.
The way it was done back in the old days, and still in an emulator...
Boot from the 3.3 System Master, swap disk for new blank and type "INIT HELLO".
You are left with a fresh clean bootable DOS 3.3 disk that boots to Applesoft prompt.
