The Apple /// outputs digital RGB (CGA). The A2M6016 is an analog RGB monitor.

Wow, no kidding. I considered it... but then I lied down until the feeling passed.
At least NTSC color is available on pin 12.
Has anyone tried that with an AppleColor monitor? 80 column and color performance? I'm debating if I want to find the bits and pieces to try it out.

There is, but the colors will be incorrect (as shown by the auction... they're not right on the monitor being displayed).
I think he's just using the standard Apple cable, and that is why the colors are wrong. Which is a kinda disappointing way to represent it, imo.
It's too high to me -- and I'm not the most thrifty of collectors.
