I can't help you with the paper manuals but I can offer you some PDF files. Actually, you could probably find the PDF files quite easily at many places on the Internet. However, I do have the Color Classic files if you're not inclined to search.
As far as the original Color Classic software goes, I can't imagine that the Color Classic would have shipped with anything out of the ordinary. Probably just your standard Mac OS floppies...
