Hope you continue to have fun devolping this further, like me following this thread.
One thing I am missing is playing around with OS-9 on my Apple ][. There my be to possibilities to do such with the ESP32 Softcard.
First, there is an emulator around for the CoCo: https://github.com/reyco2000/CoCo2-CYD. Well, I might underestmate the work to take out the code for the display and implement the composite output ...
Second, emulation of The Mill from Stellation Two. Code base could be the emulation done for MAME.
I've always been interested in OS-9 but lacked the hardware to play with it. I actually knew quite a few people who worked for MicroWare over the years and I used to live pretty near where they were located. When I was in High School one of my neighbors had a SWTPC 6800 machine that had been modified for a 6809 and was running OS-9. I always wanted a Mill board but was never able to get one. I considered buying a CoCo a few times but never pulled the trigger on that because usually what hardware was available wouldn't have been enough to run OS-9 and I wasn't really too interested in what little native CoCo software was out there.
