i've changed the appearance on os 9 on my wallstreet. using a control panel called Screenman, i put on a fresh new boot screen with a later version of the apple smiley face thing. also, search for mac os 9 appearance, themes, etc on google and you'll get sites with different appearance sets for os 9. i just downloaded one and put it in the appearance folder (it should be somewhere under system in the hd). from there, you can just pull it up through your appearance control panel. this might be easier for me to explain if i were on my powerbook compared to my ibook, but i hope it's useful anyway. the variety of themes and boot screens for os 9 is endless!
just a reference as well: resexcellence.com they have stuff for os 9 and os x. i got my boot screen and extensions strip off there.

Make sure that you increase the Appearance control panel's memory allocation if you decide to change themes.
