X-Chat Aqua is free and fairly easy to use (and is what I use). Snak and ircle would be the other most common, but there are some new ones and several command-line clients.
I've been experimenting with Colloquy, which seems pretty nice. X-Chat seemed a bit rough to me, but I didn't play with it much.
Depends what you're after :). For me, it's all simpleness. a few networks, a few channels... and tabs. that's all. Snak works excellently for me.
Ircle, Snak and X-Chat Aqua seem to be mainstays.

why dont you run a IRC server on the AF server ... so then people would just need to connect to irc.applefritter.com and you could have multiple chanels etc ... just a thought

You could always forward irc.applefritter.org to whatever server you're using. If forward is the right word.

I did get timed out for the first time since the channel started up a few days ago... took about 5 minutes to get back on. Server speed is up and down, but has been about normal for the most part.
